About filet mignon skewers.
Tenderloin trim, cubed to 1.25" — the size that stays medium-rare through a fast sear without drying at the edges. We alternate with tri-color pepper and red onion, three cubes and three vegetable pieces per skewer.
Plain skewers are the versatile default — salt and pepper before the grill, serve with anything. Marinated skewers rotate weekly through olive oil, rosemary, and garlic; balsamic and shallot; or soy, ginger, and sesame. Ask what's in the case that day.
Two skewers feed one person as a main. Three as a side. Grill-to-table in eight minutes.

How we'd cook it.
01 · Method
Grill
High direct heat, oil the grates. 2 minutes per side, four sides. Total 8 minutes. Vegetables and beef finish together if the cubes are 1.25". Rest 3 minutes off the fire.
02 · Method
Cast iron
Skewers can go in the pan if it's wide enough — otherwise remove from the skewer, sear the beef and vegetables separately, and rebuild on a warm plate. Same 8-minute cook.
